What are microgreens/microshoots?

Microgreens, sometimes also referred to as microshoots or shoots, are a fresh produce product. Microgreens are a diverse category of produce and may be vegetables including legumes, fruits, or flowers.  This produce can be found in the produce section of many grocery stores, farmers markets, and restaurants.  Microgreens are often confused with sprouts.  By definition, sprouts are the first stage after germination in a plants development, and are harvested when the plant is only a few days old, when the plant does not have any true leaves.  Microgreens are the next stage in the life cycle of a plant, after the sprout stage, and is noticeable by the presence of the plants first set of true leaves.  Microgreens are harvested around 10 days and up to a few weeks.
